Chicken of the Woods Mushroom Plugs for sale.

The Chicken of the Woods mushroom (Laetiporus sulphureus) develops huge, brilliant orange, multi-layered fruiting bodies with a chicken-like feel. When cooked, these mushrooms are luscious, juicy, and meaty, with a subtle lemony scent. It may be tough to cultivate chicken of the woods, thus it is advised for gardeners who have had some success with other advanced species or are seeking to experiment with new techniques.

Because this species is not a powerful competitor, it needs a distinct culture method and grows best when logs are disinfected with steam, incubated and colonized in filter patch bags, then partly buried in a shady location. Plug spawn is appropriate for projects involving 1 to 10 logs, however some log growers utilize it for bigger projects.

Inoculation

The chicken of the woods thrives on oak logs. After a period of colonization in filter patch bags above ground, logs should be partly buried under 2 inches of topsoil. The mushrooms will produce fruit on logs and emerge from the ground.

Note that chicken of the woods is susceptible to being outcompeted by other fungi and is not a consistent grower unless your logs are first treated. To reduce variables, we recommend sterilizing 8″ × 8″ oak log segments in a pressure cooker or steam sterilizer prior to inoculation and incubating them for many months in sealed filter patch bags until they are fully colonized. Remove them from the bag and bury them halfway in a shaded area. (Your log segments may be sterilized in a 22-quart or larger pressure cooker, such as an All-American.)

Storing

If you don’t plan to use immediately, you can refrigerate your spawn for up to 6 months.

Cooking

Ensure that you gather young chicken-of-the-woods mushrooms to prevent a brittle texture. When cooked, they have a meaty, somewhat lemony taste and chicken-like texture. The harder exterior parts are ideal for drying and use in soups or risottos, or for grinding into rubs. When sautéed with garlic, onions, salt, and olive oil, the more soft center parts are wonderful. (A dash of white wine is also good!)
